I don’t know about you, but when I was growing up, Sloppy Joes were a frequent staple in our house, not to mention a common school lunch favorite.
This recipe is a healthier take on the traditional Sloppy Joe. Many classic recipes rely on highly processed ingredients like ketchup and Worcestershire sauce. This version uses simple ingredients, minimizes processed foods, and can easily fit into a migraine-friendly diet.
Ingredients
- 2–2½ lbs ground beef (I prefer 85% or 90% lean)
- 1 large shallot, diced
- 4 cloves garlic, chopped
- ½ bell pepper, diced (any color; feel free to add more)
- 1 tsp soy sauce or coconut aminos
- 2¾ tbsp honey or maple syrup
- 2 tbsp white vinegar
- 3 tbsp tomato paste
- 1 tsp Dijon mustard
- 1 can crushed tomatoes
- Salt, to taste
- Pepper, to taste
Instructions
- Brown the ground beef in a large skillet over medium heat. Drain any excess grease.
- Add the shallot, garlic, and bell pepper. Sauté for about 5 minutes, or until the vegetables begin to soften.
- Stir in the tomato paste and cook for 1 minute.
- Add the remaining ingredients and mix well.
- Simmer for about 10 minutes, stirring occasionally, until the mixture thickens.
- Taste and adjust the seasonings as needed.
Serve on your favorite bread, over noodles, or on a bed of greens for a lower-carb option.
