Making Spaghetti Squash

When I’m trying to cut down on carbs or just add more veggies to my favorite pasta dish, spaghetti squash is my go-to. I know a lot of home cooks say they’re unsure how to cook it (or it just seems intimidating!), but it’s actually super easy once you know the steps.

Ingredients

  • 1 Spaghetti Squash
  • Olive oil (to coat the squash)
  • Seasonings to taste – garlic powder, pepper, and salt

Instructions

  1. Preheat oven to 375°F.
  2. Rinse and dry the outside of the squash.
  3. Cut the squash in half. You can slice it either lengthwise or crosswise:
    • Cut lengthwise if you plan to fill it (for stuffed squash).
    • Cut crosswise if you’re using it as noodles — it makes longer strands.
    Tip: If it’s too hard to cut, microwave the squash for 30 seconds to soften it slightly.
  4. Scoop out the seeds.
  5. Line a baking sheet with parchment paper.
  6. Brush the inside of each half with olive oil and season with salt, pepper, and garlic powder.
  7. Place the squash halves cut side down on the baking sheet.
  8. Bake for 45 minutes to 1 hour, depending on the size of your squash and your oven. The edges should be lightly golden, and a fork should slide in easily.
  9. Let cool for 5 minutes.
  10. Use a fork to scrape the inside. The squash will naturally pull into noodle-like strands.

Serve it with your favorite sauce, mix it into a stir-fry, or top with your favorite protein for a healthy and satisfying meal!
