“Lemon” Pepper Ground Turkey Orzo (Migraine Diet Friendly)

As a busy working mom, I’m always looking for fun, flavorful, and fast meals to finish the week strong. This recipe comes together in just about 30 minutes and the best part? The kids love it!

Ingredients

  • 2 lbs ground turkey
  • 1 box orzo
  • 4 cups broccoli florets
  • 6 cloves garlic, minced
  • 2 large shallots (or 1 medium onion if not following the Migraine Diet)
  • 2 tbsp olive oil
  • 3 tbsp distilled vinegar (or 1 lemon if not following the Migraine Diet)
  • 1 tsp red pepper flakes (optional)
  • 1½ tsp salt
  • 2 tsp black pepper
  • 1/2 cup fresh parsley, chopped

Instructions

  1. Cook the Orzo:
    Bring a large pot of salted water to a boil, the water should taste slightly salty like ocean water. Add the orzo and cook according to the package directions (usually 10–15 minutes).
    In the last 3 minutes of cooking, add the broccoli florets. Once done, drain and set aside.
  2. Sauté Aromatics:
    While the orzo cooks, heat olive oil in a large skillet over medium heat. Add garlic and shallots, cooking for 2–3 minutes until fragrant.
  3. Cook the Turkey:
    Add the ground turkey to the skillet. Brown for 5–7 minutes, breaking it apart with a spatula until no pink remains.
  4. Season and Combine:
    Stir in vinegar, salt, black pepper, and red pepper flakes (if using). Taste and adjust seasonings as needed.
  5. Mix It All Together:
    Add the cooked orzo and broccoli into the skillet and mix until everything is well combined. Garnish with fresh parsley and serve warm.

💡 Tip: This dish is great on its own, but it also pairs nicely with a side salad or a sprinkle of feta (if not migraine-sensitive).
